Lutong Pinoy p.2 (Kare Kare, Diningding at Pancit Bihon)



Di talaga matatawaran ang hilig ng Pinoy sa pagluluto.
Hilig nati sa pagkain ay dala dala natin kahit san man patungo.
Kaya ngayon hay… maraming pagkain ang nais na matikman.
Iyong tipong maamoy palang ay sadyang natatakam.
Oh aking mga nais manamnam… kalian ka matitikman…

Kare Kare
Ingredients:
§  3 lbs oxtail (cut in 2 inch slices) you an also use tripe or beef slices
§  1 small banana flower bud (sliced)
§  1 bundle of pechay or bok choy
§  1 bundle of string beans (cut into 2 inch slices)
§  4 pcs eggplants (sliced)
§  1 cup ground peanuts
§  1/2 cup peanut butter
§  1/2 cup shrimp paste
§  34 Ounces water (about 1 Liter)
§  1/2 cup annatto seeds (soaked in a cup of water)
§  1/2 cup toasted ground rice
§  1 tbsp garlic, minced
§  1 large onion, chopped
§  salt and pepper

Cooking Procedure
1.       In a large pot, bring the water to a boil
2.       Put in the oxtail followed by the onions and simmer for 2.5 to 3 hrs or until tender (35 minutes if using a pressure cooker)
3.       Once the meat is tender, add the ground peanuts, peanut butter, and coloring (water from the annatto seed mixture) and simmer for 5 to 7 minutes
4.       Add the toasted ground rice and simmer for 5 minutes
5.       On a separate pan, saute the garlic then add the banana flower, eggplant, and string beans and cook for 5 minutes
6.       Transfer the cooked vegetables to the large pot (where the rest of the ingredients are)
7.       Add salt and pepper to taste
8.       Serve hot with shrimp paste. Enjoy!



Diningding

Ingredients:
  • 1 bundle Sitaw (String bean) cut into 1" strips
  • 2 cups of squash, cubed
  • 2 bundle ocra (halves)
  • 1 whole onion, skinned
  • 1 Tomato, quatered
  • 100 grams liempo meat, cut
  • 1 bundle bataw (Bean pod), cut into halves
  • 1 cup saluyot leaves (jute leaves)
  • 1 cup ampalaya,julienne
  • 1 cup eggplant (slice)
  • 1/5 cup.bagoong isda juice
  • Vetsin
  • Leftover fried fish
Procedure of Cooking:

In a casserole, boil 1 litre of water along with liempo meat, onion, tomato, simmer for 10 minute. Add bagoong isda juiceusing strainer to separate solid particle. Wash vegetable and pour in squash, sitaw, bataw,ampalaya,eggplant,ocra, bring it to boil and simmer until squash tender. Salt to taste, add vetsin and leftover fried fish. Bring to boil and served diningding while it is hot along with hot rice. I forgot to include when to add saluyot as the comment ask. Add Saluyot along with fried fish, bring to oil and served...


Pancit Bihon

Estimated cooking & preparation time: 45 minutes

Ingredients:

·    1 8 oz. pack pancit bihon noodles
·    1 cooked chicken breast, shredded
·    2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups of water
·    1/4 cabbage, sliced into strips
·    1 onion, pealed and sliced
·    3 cloves of garlic, crushed and minced
·    1/3 cup scallions, cut into pieces
·    1 carrot, sliced into strips
·    2 tablespoons of cooking oil
·    3/4 cup diced celery
·    3 tablespoons soy sauce
·    Salt and pepper to taste
·    5 pieces of calamansi or 1 lemon, sliced

Procedure of Cooking:

·    Soak the pancit bihon noodles to soften for 10 minutes
·    Grease a large pan or wok with oil. Sauté garlic and onions.
·    Add the chicken broth, the shredded chicken breast and all the vegetables until cooked.
·    Mix in the pancit bihon noodles and add the soy sauce, cook for about 5 minutes or until the noodles are soft.
·    Salt and pepper to taste.
·    Serve hot with sliced calamansi on the side.

Cooking Notes
·    Calamansi or lemon is to be squeezed into the pancit bihon before eating.
